Lestang 1573, located just outside the historic town of Sancerre, combines centuries of heritage with contemporary precision. First recorded in 1573, the estate was purchased by Rémy Graillot in 2013 and underwent a three-year restoration, including the château and a purpose-built winery. Its three hectares of sauvignon blanc are planted on 100% flint terroir, with vines averaging 35 to 45 years of age. The Tradition cuvée is fermented and aged on fine lees in stainless steel, emphasising purity and tension. The Cuvée Illustre Voyageur, from century-old vines, is fermented with wild yeast in 600-litre seasoned oak demi-muids and aged on lees for twelve months, developing texture
and depth without overt oak.
